Peanut Butter Rice Krispie Bars with Functional Mushrooms
- 3 cups Gluten-Free Rice Krispies
- 1/2 cup Crunchy Peanut Butter
- 1/2 cup Maple Syrup
- 1/4 cup Coconut Oil (reserve 1/2 tbsp to melt with chocolate)
- 2 tsps 6 Mushroom Blend @eversiowellness (optional)
- 1 cup Dark Chocolate Chips

Prepare the Base: In a medium saucepan, melt the peanut butter, maple syrup, coconut oil & mushrooms over low heat, stirring constantly until smooth and well combined.

Mix with Rice Krispies: Remove the saucepan from heat and add the Krispies. Stir until the cereal is evenly coated with the peanut butter mixture.

Form the Bars: Line an 8×8-inch baking pan with parchment paper. Press the Rice Krispie mixture firmly into the pan to create an even layer.

Add the Chocolate Topping: Melt the chocolate chips over a double boiler with 1/2 tsp coconut oil. Pour the melted chocolate over the Rice Krispie layer and spread evenly with a spatula.

Chill and Set: Place the pan in the freezer for at least 1 hour, or until the chocolate is set and the bars are firm.
